Zhejiang cuisine, alternatively known as Zhe cuisine, is one of the Eight Culinary Traditions of Chinese cuisine. It derives from the traditional ways of cooking in Zhejiang Province, which is located south of Shanghai and centred around Hangzhou, a historical Chinese capital. In general, Zhejiang cuisine is not greasy but has a fresh and soft flavour with a mellow fragrance.

West Lake vinegar fish
This dish is said to have come from the story of "Uncle Chuanzhen": In ancient times, the Song brothers lived on the banks of the West Lake, and they made a living by fishing. The local villain Zhao officials saw that the wife of older brother was very beautiful, and he killed the older brother. And he wanted to kill the young brother too. The sister-in-law urged the young brother to run away. She used the sweet and sour fish to say goodbye to him. She wanted him to “whatever bitter and sweet don't forget the hard of people." Later, the younger brother got the fame, except for the violent. An occasional banquet, he tasted this sweet and sour fish dish, and finally found the sister-in-law who escaped and hided the name. e resigned and be a fisherman again. Later generations passed on their ancestors and cooked this vinegar fish. The "West Lake vinegar fish" became the traditional dish of Hangzhou.
2. dongpo meat
This dish is said to have come from the story of Su Dongpo, a great writer of the Song Dynasty. During the Song and Yuan Dynasties (about 1090 AD), Su Dongpo became the governor of Hangzhou, mobilized the people to guide the West Lake, and was successful. He told the family according his experience to cook pork. Together with the wine, it was distributed to the migrant workers to the people. The family accidentally burned the meat and alcohol together. As a result, the meat tastes particularly delicious. People pass on the Dongpo personality and use this unique flavor to make the Dongpo meat.
3. xihu Chuncai soup
Xihu chuncai soup is made from fresh medicinal herbs and chicken silk from Hangzhou West Lake. This dish is fresh and emerald green, smooth and tender, with white chicken silk, soft ham, bright colors, and delicious soup. It is a famous Zhejiang dish with Hangzhou flavor.
4. longjing shrimp
“Longjing Shrimp” is made from West Lake Longjing New Tea and fresh river prawn before the Ching Ming Festival. The color of the dishes is white and green, and the taste is fresh and fragrant, with strong local characteristics.
